Prep Raw Rice for Fried rice

Instructions

2 cups of Jasmine rice + 2 -1/4 cups water (makes enough rice for a family of 5)

It’s very easy to adjust portions. If you only want to make 1 cup of rice then add 1-1/4 cups water. If you want to make 3 cups of rice then add 3-1/4 cups of water.

Directions

  1. Wash jasmine rice in fine sieve to remove starch. Try to run cold water over it for at least a minute.
  2. Take the 2 Cups of washed jasmine rice and put into pot with 2 – 1/4 cups water. Use filtered water from refrigerator or bottled water don’t use tap water.
  3. Get your timer out. Put your pot on the stove and Cook HIGH heat for 5 minutes (until boiling) uncovered. Rice should be rising up just slightly above the water around perimeter of pot. If after 5 minutes your rice is still below the water stand there and don’t move and watch the until the rice is slightly above the water. To be specific once you see any portion of the rice breaching the water level you’re good to go onto step 4.
  4. After first 5 minutes are up rice should be slightly above water put on lid, but leave slightly off (super small crack) to allow steam to escape. Turn heat down to MEDIUM heat and cook for 5 more minutes. You should not see any water above rice. 
  5. Turn heat off and place lid on tight. Set timer and wait 10 minutes.  
  6. Use fork to fluff rice. Spread onto cookie sheet with parchment paper spread out and put in fridge for 30 minutes or freezer for 15 minutes. Rice should be fluffy. Just cooked or slightly under cooked. Should have a small amount of bite. 

Notes:

  1. If you’re not wanting to make fried rice then you can just skip step 6 above and your rice is ready to serve. Keep you pot on the stove back burner until ready to plate up. Putting your pot of rice (even with the lid intact) onto a counter top will make your rice cold and dry out.
  2. This recipe is from some Thai women I found online. I have failed at making rice my whole life, it was either mushy or dried out, or just not right. These instructions are legit. If cooked right nothing sticks to the pot. Clean up is a breeze.
  3. The Jasmine rice at Publix, Walmart, Winn-dixie will all work, but if your wanting Japanese hibachi texture go to any Asian Market grocery store and pick up a bag of their Jasmine rice and you won’t be disappointed. The best rice are in bags that don’t have any English words on them. Just ask the clerk to show you the jasmine rice bags.
